Ingredients
Serves 4-6
2 – 3 Lbs of Organic chicken
(Skinless, Boneless, Breasts are the healthiest)
1/3 cup extra virgin olive oil
2 teaspoons grated lemon zest (about 2 lemons)
1/3 cup freshly squeezed lemon juice
3 cloves of garlic grated
1 tablespoon minced fresh rosemary
1 teaspoon fresh ground pepper
Preheat oven 350
Combine all ingredients (besides chicken)
and whisk. Pour over chicken and marinate
for at least 4 hours or overnight. The longer the
meat is marinated, the more flavor!
Bake COVERED for 25-30 min OR Cook
